CHICKEN RAYMONDS 
Chicken breasts (1/2 per person)
Butter and olive oil
Ricotta cheese
Mozzarella cheese
1 tbsp. onion, chopped
Prosciutto, ham or cottro salami
Spaghetti sauce (fresh or Prego)

In skillet brown chicken in equal amount of butter and olive oil. Toward end of browning, add chopped onion and saute lightly. In individual baking dishes (4x6x2 inches) or au gratin dishes which have been lightly greased, place 2 tablespoons (to 5 tablespoons) spaghetti sauce. Layer with chicken breasts, Ricotta cheese and 1 slice Prosciutto (or ham or salami).

Cover with spaghetti sauce. Bake at 350 degrees for 30 minutes. Add Mozzarella cheese. Bake until it melts. Serve with linguine in garlic butter sauce and tossed green salad. Serves 2 or 3.
