CHICKEN MANICOTTI 
Chicken, boneless breast
1/2 c. Parmesan cheese
1/2 c. ricotta cheese
1 tbsp. parsley

Mix all cheese and parsley in bowl.

SAUCE:

1/2 c. onion
1 green pepper
5 plum tomatoes
1 can tomato sauce
1 clove of garlic

ADDITIONAL INGREDIENTS:

1 bag Mozzarella cheese
Toothpicks
Olive oil

FIRST: Fry onion, garlic in olive oil. Add peppers, tomatoes and can of tomato sauce. Cook about 15 minutes.

SECOND: Pound out chicken flat, spread the mixed cheeses and parsley on chicken. Then roll up and hold with toothpick.

THIRD: Put little sauce on bottom of pan, then put chicken on top. Put rest of sauce over chicken. Bake uncovered at 350 degrees for 45 minutes, then add bag of Mozzarella and bake additional 10 minutes or until cheese is melted. Then it's done!
