CHICKEN SAN FRANCISCO 
Cheese Sauce
Rice Pilaf
Boneless chicken breast
Grated cheddar cheese (1 tbsp. per person)
Broccoli spears (steamed, a little crunchy)
Bacon strips, cooked until crisp
Sliced almonds, toasted (1 tbsp. per person)

Prepare Cheese Sauce and Rice Pilaf. Set both aside and keep warm. Bread and fry the chicken breasts in oil until almost done, but not quite. Place bed of Rice Pilaf in oven proof baking dish. Top rice with chicken breasts. Sprinkle grated cheddar over chicken. Top each with 1 broccoli spear, 1 strip of bacon, some toasted almond slices and some cheese sauce. Place in 350 degree oven for about 5 minutes or until cheese melts and serve immediately. Can use frozen Rice Pilaf that you boil in water - use package for 2 chicken breasts.

CHEESE SAUCE:

2 tbsp. butter
2 tbsp. flour
1 1/2 c. milk
1 c. grated cheddar cheese
1/2 tsp. salt
1/4 tsp. white pepper
1/8 tsp. paprika
1/2 tsp. dry mustard

Melt butter in saucepan. Stir in flour until blended. Add milk slowly. Stir until sauce is smooth and milk slightly bubbles. Reduce heat and add cheese, salt, pepper, paprika and dry mustard. Stir until cheese is melted and sauce well blended. Serves 4.
