MARSHMALLOW ICING | |
2 1/2 c. sugar 1/2 c. corn syrup 1/2 c. cold water 1/4 tsp. salt 2 egg whites 1 tsp. vanilla 10 marshmallows Boil sugar, syrup, salt and water until it forms a soft ball in cold water. Beat egg whites 2 minutes at #8 speed until stiff. Continue beating and pour syrup over egg whites slowly. Takes 3 to 4 minutes or longer. Then add vanilla and marshmallows and continue beating until icing forms peaks when lifted with a spoon (about 4 minutes). Enough for 3 layer cake. |
