VEG-ALL CASSEROLE 
2 cans mixed vegetables (drained)
1/4 c. chopped green pepper
1/4 c. chopped onion
1 c. mayonnaise
1/2 or 2/3 c. cubed Velveeta cheese
1/2 stick melted butter
1 c. crushed Ritz crackers

Mix first 5 ingredients. Put in 9x13 pan. Mix crackers and butter; spread on top of vegetables. Bake 350 degrees for 30 minutes.
