CHEESY POTATO PUFF | |
Egg substitute equivalent to 1 egg 1/4 c. skim milk 3 c. mashed potatoes 1 tbsp. finely chopped onion 1 tbsp. chopped fresh parsley 2 c. cubed low-fat cheese 3 egg whites, beaten stiff 1. Preheat oven to 375 degrees. 2. Combine egg substitute and milk. Mix in potatoes, onion, parsley and cheese. 3. Beat egg whites until stiff and fold into mixture. 4. Place mixture in baking dish that has been greased with butter or Pam. 5. Bake 40 to 45 minutes or until a knife inserted in center comes out clean. Makes 6 servings. |
