CANDIED SWEET POTATOES 
6 sm. sweet potatoes, pared
1/2 tsp. salt
1/4 c. dark brown sugar
1/2 c. water
4 tbsp. butter
1 tbsp. lemon juice
1 baking dish rubbed with vegetable oil
Fresh orange wedges for garnish

In kettle, put sweet potatoes and water to cover and salt. Cover and simmer 15 to 20 minutes or until tender. Drain and slice into 1/2 inch thick pieces. Put into greased baking dish. In small saucepan, cook brown sugar, 1/2 cup water, and butter. Stir until smooth. Add lemon juice and pour mixture over potatoes. Preheat oven to 375 degrees. Bake 20 to 30 minutes. When done, garnish with orange wedges.
