ZUCCHINI PANCAKES 
2/3 c. Bisquick
1/2 c. grated Parmesan cheese
Dash of pepper
2 lg. eggs, beaten
2 c. shredded zucchini

Place Bisquick and Parmesan cheese into a bowl; stir together to combine; add pepper. Then add eggs. Combine together. Fold in zucchini. Drop by large tablespoon fulls into hot oiled frying pan.

Serve with sour cream. Great as a side dish with an easy summer meal.
