STUFFED SHRIMP APPETIZER 
1 lb. large shrimp
4 tbsp. butter
1/2 c. celery, finely minced
1/2 c. onion, finely minced
1/4 c. green pepper, finely minced
1/2 lb. fresh crab meat
1 tbsp. lemon or lime juice
1 c. fresh whole grain bread crumbs
2 eggs, lightly beaten
1 tbsp. fresh parsley, finely minced
1/4 tsp. black pepper
1/2 tsp. paprika
1 tsp. dry mustard

Melt butter in a skillet and saute celery, onion and green pepper until wilted, but not brown. Stir to prevent burning. Add crab meat and stir a few seconds. Then add lime or lemon juice. Remove from stove and add bread crumbs and beaten eggs. Then add all remaining ingredients. Let cool slightly before stuffing shrimp. Butterfly 1 pound large shrimp as for breading, mound crab mixture on each shrimp and place on cookie sheet under broiler for approximately 6 to 8 minutes. Stuffed shrimp may be individually wrapped in foil and frozen for future use.
