JIM AND JEAN'S CORNISH HENS | |
2 pkgs. long grain and wild rice mix 1 1/4 c. diced celery 1 can water chestnuts, sliced 1 1/4 c. chopped mushrooms (8 oz.) can, drained 1/2 c. melted butter 2 tbsp. soy sauce 8 Cornish hens Cook rice using package directions and cool. Add remaining ingredients. Toss lightly and mix. Salt inside of birds and stuff and truss. Roast loosely covered with foil, for 30 minutes or more at 375 degrees; then 60 minutes uncovered (or more, until tender). Baste often with melted butter. |
