CORN CASSEROLE 
1 stick butter
1 small onion, chopped
2 cans creamed corn
1 small jar pimiento
2 eggs, beaten
1 tsp. sugar
1/4 tsp. salt
1/4 tsp. pepper
1 c. Minute rice
grated cheese
1/3 c. bell pepper, chopped fine

Melt butter. Sauté onion and pepper. Add all other ingredients except cheese. Put in casserole dish and bake at 325°F for 45 minutes. About 10 minutes before done, add cheese on top and finish cooking the 10 more minutes.
