LEMON CHESS PIE 
3 eggs
1 1/4 c. sugar
Dash of salt
1 unbaked 9 inch pie shell
Juice of 2 lemons
Grated rind of 1 lemon
3 tbsp. melted butter

Beat eggs slightly; add sugar, butter and lemon juice. Beat well. Stir in lemon rind and salt. Pour into pie shell. Bake at 350 degrees for 25 to 30 minutes or until set.
