CHEWY HOLIDAY FRUIT BARS | |
1 1/4 c. sifted all-purpose flour 1/2 c. (1 stick) butter, softened 1 c. sugar 2 eggs, beaten 1 tsp. rum flavoring 1/2 tsp. salt 1/2 tsp. baking powder 1/2 c. moist flaked coconut 1/2 c. diced candied red cherries (Liberty) 1/2 c. diced candied pineapple (Liberty) 1/2 c. chopped filberts Confectioners' sugar For pastry, combine 1 cup flour, butter and 1/4 cup sugar. Blend well and press mixture firmly in bottom of 7 1/2 x 12 x 2 inch pan. Bake at 325 degrees for 25 minutes. Meanwhile, gradually beat 3/4 cup sugar into eggs. Add rum flavoring. Sift 1/4 cup flour, salt and baking powder; stir into egg mixture. Fold in remaining ingredients. Spread mixture over baked crust in pan. Bake 35 minutes longer. Cool slightly. Sift confectioners' sugar over top or drizzle confectioners' icing over top. Yield: 24 bars. |
