ARTICHOKE BALLS 
2-3 cloves garlic, mashed
6 tbsp. olive oil
1 (14 oz.) can artichoke hearts, drained and mashed
2 eggs, well beaten
1 1/2 c. seasoned bread crumbs
1 c. Parmesan or Romano cheese
Salt and pepper to taste

In a skillet, saute the garlic in olive oil. Add artichokes and simmer for 2 minutes. Fold in the eggs and simmer for 2 minutes. Add the bread crumbs and cook for 2 minutes. Remove the mixture from heat, add the cheese, mix well, and cool. When cool, form it into bite-sized balls. Roll the balls in bread crumbs and bake at 350 degrees for 10 minutes. Makes 24.
