ARTICHOKE NIBBLES | |
2 (6 oz.) jars marinated artichoke hearts 1 sm. onion, finely chopped 3 cloves garlic, minced or pressed 4 eggs 1/4 c. Italian bread crumbs 1/4 tsp. salt 1/8 tsp. EACH of pepper, oregano, liquid hot pepper seasoning 2 c. (8 oz.) shredded sharp Cheddar cheese 2 tbsp. minced parsley Drain marinade from one jar artichoke hearts into a small frying pan. Chop artichokes; set aside. Heat marinade, add onion and garlic and cook until soft. In bowl, beat eggs, stir in bread crumbs, seasonings, cheese and chopped artichokes. Turn into grease 7x11 inch baking pan. Bake, uncovered, at 325 degrees for 30 minutes until set. Cool. Cut into small squares. Serve room temperature or warm. |
