ARTICHOKE NIBBLES 
2 (6 oz.) jars marinated artichoke hearts
2 tbsp. oil
1 sm. onion, finely chopped
Dash of garlic powder
4 eggs, well beaten
1/4 c. fine bread crumbs
Dash of salt
Dash of black pepper
Dash of oregano
Dash of hot pepper seasoning
2 c. sharp Cheddar cheese, shredded
2 tbsp. chopped parsley

Drain marinade from 1 jar of artichoke hearts; reserve liquid. Drain second jar and discard liquid. Chop artichokes and set aside.

Heat oil, add onion and garlic and saute until tender, about 5 minutes. Combine egg, bread crumbs, salt, pepper, oregano, and hot pepper seasoning. Fold in cheese and parsley. Add artichokes, reserved liquid, and onion mixture and blend well. Turn into a 9-inch square glass baking dish. Bake at 325 degrees for 30 minutes. Allow to cool briefly and cut into 1-inch squares.
