IMPOSSIBLE COCONUT PIE 
1 1/2 c. sugar
4 eggs
2 c. milk
1/2 c. butter
1 tsp. vanilla
1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. flour
1 c. or 14 oz. can coconut

Preheat oven 350 degrees. Beat egg with mixer add sugar, butter, vanilla. Beat again. Then sift all dry ingredients together and add to egg mixture along with the coconut. Beat again well.

Pour into 2 (9 inch) ungreased pie pans or 1 (13 x 9) cake pan. Bake 35 to 40 minutes.
