GREEK WEDDING
COOKIES/KOURABIEDES
 
1 lb. butter
1 egg yolk
1/2 c. confectioners' sugar
1/4 c. orange juice
1 oz. brandy
3 c. flour
1/2 c. finely chopped almonds
1 tsp. almond extract
1 lb. box confectioners' sugar for Topping
Sm. paper cupcake containers
1 box whole cloves

Allow butter to soften at room temperature. Beat with electric mixer until white and creamy. Add sugar, egg yolk, orange juice and brandy, beating all the while until thick as mayonnaise. Sift flour into bowl and continue mixing. Add nuts and finish by kneading for 5 minutes. Roll into ball and refrigerate for 1 hour. Shape dough into crescents or small balls and place on ungreased cookie sheet, 1/2 inch apart. Stick a clove in center and bake in a 350 degree oven for about 25 minutes or until golden brown. Cover wax paper with confectioners' and place warm cookies on it and cover with more sugar. Place in small paper cups and add additional sugar, if needed. Enjoy!
