BASIC FORMULA FOR SEAFOOD | |
1/2 stick butter 1/4 c. lemon juice Garlic to taste (we like it and use 3 cloves) This is the master plan for salmon, prawns, sole, orange roughy, scallops, halibut, cod, etc. The proportions can be used with approximately 1 pound of fish. Fish steaks will use a little more, scallops a little less. The important thing to remember is that in good cooking there are no absolute rules. Place the fish in a baking dish and bake at 400 degrees for 10 minutes for each 1 inch in thickness. Fish will be flaky and opaque when done. Or place on foil in your barbecue or under broiler - do not turn fish. Just cook 10 minutes for every 1 inch in thickness. If you like, add extras during last minutes of cooking time. Some choices might be almonds, dill, Parmesan cheese, wine or herbed butter. |
