PINEAPPLE CHICKEN 
1 tbsp. olive oil
1 c. white flour
1 tsp. salt
1 tsp. paprika
1/4 tsp. ground pepper
8 skinned chicken breast halves
1 can (20 oz.) pineapple chunks, in heavy syrup
1/2 c. sliced green pepper
2 green onions, sliced
1 tbsp. brown sugar
1/4 c. 7-Up

Preheat oven to 425 degrees. Cover bottom of a large shallow baking pan with olive oil. Combine flour, salt, paprika and pepper in a plastic bag. Piece by piece, coat chicken by shaking it in bag with the seasoned flour.

Arrange floured chicken in baking pan in one layer. Bake at 425 degrees for 20 minutes. Turn chicken. Combine pineapple, green pepper, green onions, brown sugar and 7-Up and pour over chicken. Lower heat to 375 degrees and bake until chicken is golden brown and sauce is thick (about 45 minutes). Serves 8.

P.S. Add more 7-Up if sauce is too thick. Heat sauce before pouring over hot chicken in pan.
