PINEAPPLE CHICKEN | |
1 tbsp. butter 1 tbsp. Puritan oil 1 (20 oz.) can pineapple chunks, in juice 1/2 tsp. paprika 1/8 tsp. pepper 1/2 tbsp. brown sugar 4 skinned chicken breast halves 1/2 tsp. salt; optional 1/4 c. sliced green pepper 1 tbsp. minced onion Preheat oven to 400 degrees. In shallow baking pan, melt butter with oil in oven. Remove pan. Combine flour, salt, paprika, and pepper in plastic bag. Coat each chicken breast. Arrange chicken breasts in pan. Bake at 400 degrees for 20 minutes. Turn chicken. Combine pineapple, green pepper, onions, and brown sugar and pour over chicken. Lower heat to 375 degrees and bake until chicken is golden brown and sauce is thick, about an hour. You may cover the pan for the first half hour. |
