PINTO BEAN CAKE 
1 c. sugar
1/4 c. butter
2 eggs
1 c. flour
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. allspice
1/2 tsp. cloves
1/2 tsp. cinnamon
2 c. pinto beans, cooked & mashed
1 c. raisins
1 c. chopped nuts
1 tsp. vanilla
2 c. apples, diced

Cream sugar, butter and eggs. Add mashed beans. Sift all dry ingredients together and add to sugar mixture. Add apples, raisins, nuts and vanilla. Pour in greased and floured pans. Bake at 375 degrees for 45 minutes or until done. May be baked in oblong, tube or bundt pan. Good plain or frost with caramel icing.
