GRANDMA'S TZIMMES (Pass) | |
3 lb. carrots, peeled & cut into pennies 3 lg. sweet potatoes, peeled & cut into pieces 7 lg. white potatoes, peeled & grated 1 lg. onion, grated 3 eggs 1/3 c. oil Matzah meal, enough to make mixture look like oatmeal Salt & pepper Honey and/or sugar to taste 1 1/2-2 lb. flanken or chuck steak Place carrots and sweet potatoes in roasting pan with meat in middle. Add water, just to cover. Place grated potatoes, onions, eggs, salt and pepper and oil in bowl. Blend together very well adding Matzah meal until mixture looks like oatmeal. Make into patties and place on top of carrots and sweet potatoes after the water has started to boil. Cover roasting pan. Baste the knaidlach once in awhile. Cook about 2 1/2-3 hours, making sure meat and veggies are soft (350 degrees). Remove meat and knaidlach. Mash sweet potatoes and carrots until fairly smooth. Add honey and/or sugar to taste. Might need some Kosher salt also. Return meat and knaidlach, but place in middle of mixture (otherwise knaidlach turns brown). Return to oven and reheat if necessary. |
