CREAMY LOW CALORIE SALAD
DRESSING
 
May also be used on baked potato.

2 c. cottage cheese (1 lb.) carton
1 c. buttermilk
1 tbsp. lemon juice
2 tbsp. chopped parsley
1/2 tsp. salt or 3/4 tsp. season salt (add other flavors if desired, onion, garlic, celery, etc.)

Sieve cottage cheese or mix in blender until smooth and creamy. Stir in buttermilk, lemon juice, parsley and salt. Chill. Makes 3 cups. Calories: 1 tablespoon = 17 calories. Fat controlled diet: Negligible fat. Diabetic and Calorie Controlled diet: 2 tablespoons = free choice. Sodium controlled diet: prepared as directed, omitting salt, 1 tablespoon = 42 milligrams sodium.
