BROCCOLI SOUFFLE 
Fresh broccoli or frozen
3 tbsp. flour
3 tbsp. butter
1 c. milk
2 tbsp. chopped onion
1 c. shredded cheese
3 eggs

Precook broccoli, just heat in a small amount of water. Make a sauce of flour, butter and milk. Stir onion and cheese into sauce. Separate the eggs, beat yolks and mix into sauce. Pour over 1 1/2 cup of broccoli. Salt and pepper to taste. Fold in stiffly beaten egg whites. Put into baking dish. Top with crushed Ritz crackers and bake at 350 degrees for 1/2 hour to 1 hour.
