1 doz. egg yolks 2 jiggers dark rum 2 tsp. vanilla flavoring 1 tsp. salt 2 tbsp. powdered sugar 1/2 c. heavy cream 3 c. sifted flour Beat eggs, rum, vanilla, salt, sugar and cream until well blended. Add flour and mix well. Transfer the dough to a well floured board and knead until dough does not stick to the hands, or until it blisters. Add flour if necessary. When dough is smooth and pliable, divide it into thirds. Place two of the thirds into a bowl and cover so the dough does not dry. Take one third and roll very thin on the floured board. Cut into strips about 4 inches long and put a slit into the center (lengthwise) of each strip. Pull one end through the slit. Fry in hot vegetable oil until lightly browned, turning each over once. Drain on absorbent paper and sprinkle with powdered sugar. |
