HOT PROVOLONE SANDWICHES 
4 English muffins, split & toasted
8 lg. mild sweet onion slices
2 c. shredded provolone or Monterey jack cheese (8 oz.)
1 c. shredded zucchini, about 1 med.)
1/2 tsp. dried basil leaves
1/2 tsp. dry mustard
4 slices bacon, crisply cooked & crumbled

Heat oven to 350 degrees. Place muffin halves on ungreased cookie sheet. Top each with onion slice. Mix remaining ingredients. Place about 1/3 cup cheese mixture on each muffin half. Bake until cheese is melted, about 5 minutes.
