BRAN MUFFINS | |
3 c. Bran Buds (or Kellogg's All Bran) 1 c. boiling water 1/2 c. oil 1 1/2 c. sugar 2 eggs, beaten 2 1/2 c. flour 1 pt. buttermilk 2 1/2 tsp. baking soda 1 tsp. salt Pour boiling water over 1 1/2 cups bran. Let stand. Mix rest of bran with sugar, eggs and buttermilk and oil. Sift flour, soda and salt. Combine all ingredients. Bake at 400 degrees for 15 to 20 minutes. You can add raisins, dates or nuts if desired. |
