ZUCCHINI - BEEF BAKE 
5 med. zucchini, sliced in 1/4" rounds
2 tbsp. polyunsaturated oil
1 lb. lean ground beef
1 med. onion, chopped
1/2 c. diced celery
1 can (8 oz.) tomato sauce
1 c. sliced mushrooms
1/4 c. red wine
1/2 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
6 oz. mozzarella cheese, shredded

Spread zucchini evenly in 13 x 9 x 2 inch baking pan; set aside. In large skillet heat oil and brown beef, onion and celery. Stir in tomato sauce, mushrooms, wine and seasonings. Spoon over zucchini. Sprinkle with cheese. Bake at 350 degrees for 20-25 minutes or until cheese is lightly browned and mixture bubbly.
