GRATIN DAUPHINOIS 
2 lbs. sliced potatoes (5-6 c.)
1 lg. clove garlic, chopped
2 c. milk
1 1/2 c. heavy cream
3/4 tsp. salt
1/2 tsp. pepper
1/2-1 c. grated Swiss cheese

Combine all ingredients except cheese in heavy saucepan. Bring to boil over medium heat, stirring with wooden spoon until mixture thickens slightly. Butter (1 tablespoon) shallow baking dish, add potatoes and cream sauce. Sprinkle Swiss cheese over the top. Bake at 400 degrees for 1 hour. Let dish rest for 20 minutes. Serves 6 to 8.
