HEARTY FISH CHOWDER 
1/4 c. butter
6 tbsp. flour
1 envelope Lipton country vegetable soup dry mix
2 c. milk
1 lb. thawed sole or flounder
1 lb. shrimp or crab
1 c. shredded sharp Cheddar cheese
Salt, pepper, and garlic to taste

Cook first 5 ingredients in large saucepan until thick, stirring constantly. Add fish and cheese and let simmer until cooked. Sprinkle with parsley before serving. Makes 6-8 small servings. Easy to double the recipe.

OPTIONAL: Add peas or mixed vegetables to chowder for "color."
