DELMONICO POTATOES | |
9 med. potatoes, peeled & chopped Salt 1/3 c. butter 1/3 c. flour 2 1/4 c. light cream or milk Salt to taste 1/8 tsp. pepper 1 (4 oz.) shredded cheese (Cheddar preferably) 3 tbsp. bread crumbs Cook potatoes in salt 20-30 minutes until tender. Drain and cool. Preheat oven to 375 degrees. Melt butter in saucepan over medium heat. Whisk in flour until well blended. Add milk and cook until thick and bubbling, stir constantly. Add salt and pepper. Place potatoes in 12 x 8 inch baking dish. Pour sauce over potatoes. Sprinkle with cheese, then crumbs. Bake 25 minutes. Serves 12. |
