TOM'S CHEESE POTATOES | |
8 med. potatoes, boiled until cooked 2 1/2 c. sharp cheddar cheese, grated 1/2 c. onion, finely chopped 1 tbsp. dry parsley 1/4 tsp. garlic powder 1/4 tsp. celery salt 1/3 c. sour cream 1/4 c. water or milk 2 tbsp. butter Dash paprika Salt and pepper to taste Drain cooked potatoes. Add butter to potato pan while the pan is still hot. When butter is melted, return potatoes to pan. Add all ingredients except water or milk and 2/3 cup of the cheese. Mash potato mixture until creamy and cheese is melted. Add water or milk as necessary to keep potatoes firm but moist (it may not be necessary to use all the water or milk). Spread potato mixture into a 9 x 9 inch square baking dish. Top with remaining cheese and sprinkle with paprika. Place under broiler until cheese is bubbly and lightly browned. Serves 6 to 8. |
