KOLACKY (CZECH PASTRY) | |
3 c. flour 1 pkg. dry yeast 2 sticks butter 1/4 tsp. mace 1/4 tsp. nutmeg 1 tsp. lemon peel 2 egg yolks 1 c. sour cream Mix flour, yeast, spices and lemon peel. Cut in butter. Add egg yolks and sour cream. Mix. Dough will be slightly sticky. Wrap in waxed paper. Chill overnight. Cut dough in 5 pieces. Roll into thin rectangle - pie crust thin. Cut into 3 inch squares, place a spoonful of apricot or prune whip in center; bring corners in; pinch edges. Place on cookie sheet. Bake 20 minutes at 350 degrees. Sprinkle with powdered sugar. Prune Whip: Pit prunes. Cook prunes with a little sugar and a little lemon juice, until soft. Drain, whip with a mixer beater. Apricot Whip: Cook dried apricots same way. Do not use jam it will burn. |
