WILD RICE SALAD WITH ARTICHOKE
HEARTS
 
6 oz. long grain and wild rice mix
1 tbsp. minced onion
1/2 c. diced celery
1/4 c. diced green pepper
1 can artichoke hearts, drained and cut up
1 c. salad shrimp or cooked cubed chicken

DRESSING:

1/2 c. mayonnaise
2 tbsp. olive oil
2 tbsp. lemon juice
1/2 tsp. curry (optional)
1 tsp. minced fresh parsley (1 tbsp. dehydrated parsley)
Salt and pepper to taste

Cook rice according to package directions, drain and cool, add remaining ingredients.
