YORKSHIRE PUDDING 
1 c. flour
1/2 tsp. salt
1 tsp. shortening or fat-drippings from roast
2 eggs
1 c. milk

Mix flour and salt in medium sized bowl. Make a well in the middle and drop in the eggs and half of the milk. Beat vigorously. Add rest of milk, beat well. Chill for about an hour. Put 1 teaspoon of shortening or fat (just enough to cover the bottom) in each muffin cup. Place muffin pan in 375 degree oven FOR A FEW MINUTES to melt and heat the pan. Add about 3 tablespoons of the batter to each muffin cup and bake at 375 degrees for about 25 to 30 minutes. Puddings should be puffed up high and browned. Don't prick them! Serve with meat and gravy instead of potatoes.
