ANGEL CAKE 
1 1/2 c. egg whites
1/4 tsp. salt
1 3/4 c. sugar
1 1/2 tsp. cream of tartar
1 1/2 tsp. vanilla or almond flavoring
1 1/8 c. flour or cake flour, sift

Beat egg whites, cream of tartar, salt and flavoring until soft peaks. Gradually add sugar until stiff peaks form. Fold in flour with a wire whisk. Line bottom of a 10" angel food cake pan with waxed paper. Bake at 350 degrees for 45 minutes.
