PEPPER AND MUSHROOM SALAD 
3/4 c. celery, sliced diagonally into 1/2 inch pieces
1 lg. red pepper
1 lg. green pepper
1/2 lb. mushrooms
1 clove garlic, chopped
1 can pitted black olives
3 fresh diced tomatoes
2 tbsp. olive oil
Salt, pepper and oregano

Put peppers under broiler until the skin browns. Cool. Peel off the skin and cut peppers lengthwise into strips. Boil celery slices in water for 1 or 2 minutes. Remove from water and add the mushrooms to boiling water for several minutes. Drain and slice mushrooms. To the peppers add mushrooms, celery slices, garlic, olives, and tomatoes. Mix in the olive oil, salt, pepper and oregano to taste. Chill before serving.
