CHOCOLATE MINT SNAPS 
4 (1 oz.) squares unsweetened chocolate
1 1/4 c. shortening
2 c. sugar
2 eggs
1/3 c. corn syrup
2 1/2 tbsp. water
2 tsp. peppermint extract
1 tsp. vanilla
4 c. flour
2 tsp. baking soda
1/2 tsp. salt
1/4 c. + 2 tbsp. sugar

Melt chocolate; cream shortening; gradually add 2 cups sugar, beating until fluffy. Add chocolate, eggs, corn syrup, water and flavorings; mix well. Combine flour, soda and salt. Add to creamed mixture and beat until blended. Shape dough into 1" balls, roll in 1/4 cup plus 2 tablespoons sugar. Place on ungreased cookie sheet. Bake at 350 degrees for 10 minutes. Cool on sheet 5 minutes. Remove to rack. Cool completely.
