CHOICE PINEAPPLE CAKE 
In large mixing bowl beat 2 eggs until fluffy.

2 tsp. baking soda
20 oz. can crushed pineapple
2 c. all purpose flour
1 c. granulated sugar
1 c. brown sugar

Mix these ingredients well by hand (no mixer). Then, add 1 cup chopped walnuts. Spread evenly in ungreased 13 x 9 x 2 inch baking pan. Bake at 350 degrees for 45 to 50 minutes. Cool and frost with cream cheese ginger frosting.

CREAM CHEESE GINGER FROSTING:

3 oz. cream cheese
1/4 c. butter
1 tsp. vanilla

2 c. powdered sugar
1/2 tsp. ground ginger

Sprinkle with nuts.
