9 eggs Pinch of salt 2 (1 lb.) boxes powdered sugar 1 box plus 1 c. cake flour 4 tsp. baking powder 1 tsp. anise oil 1 tbsp. lemon juice Beat eggs until fluffy. Add powdered sugar on low speed until all is added. Add anise oil and lemon juice and beat on high for 30 minutes. Pour into flour that has been sifted with baking powder and mix well. Put on floured board and knead until dough feels firm. Add a little more flour if needed. Set dough in refrigerator 10 minutes. Roll out and cut. Use springerlie rolling pin or springerlie wooden designed block if you have one. Let cookies set about 10 hours on a lightly greased baking sheet. Bake 12 minutes at 350 degrees. |
