PINEAPPLE SWIRL COFFEE CAKE | |
1 c. crushed pineapple 1/3 c. shortening 1/2 c. sugar 1 egg 1 tsp. vanilla 1/2 c. pineapple juice (syrup) 1 1/4 c. sifted flour 1 1/2 tsp. baking powder 1/4 tsp. salt 1/3 c. brown sugar 3 tbsp. melted butter 1/3 c. walnuts Drain pineapple well, reserving 1/2 cup juice/syrup. Cream shortening and sugar. Add egg and vanilla. Beat until light. Sift together flour, baking powder, salt, then add to creamed mixture alternately with reserved syrup, beginning and ending with flour mix. Spread with pineapple. Top with remaining batter. Combine brown sugar, nuts and butter; sprinkle over all. Bake at 350 degrees in an 8"x8"x2" pan for 35 minutes. |
