5 3/4 to 6 1/4 c. flour 1 1/2 tsp. salt 1 pkg. quick rise yeast 2 c. water 1/4 c. olive oil or vegetable oil In bowl mix 2 cups flour, salt and yeast, set aside. In small saucepan heat water and oil to 125 to 130 degrees F on a deep fryer/candy thermometer. Add to dry ingredients; mix well; beaten 2 minutes with electric mixer on medium speed. With spoon stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic; about 4 to 6 minutes. Cover and let rest 10 minutes. Divide into 4 sections. May be frozen or used right away. Grease 14 inch pizza pan; grease hands, spread dough onto pan top with favorite sauce and meat or vegetable ingredients. Bake 10 minutes at 425 degrees. Add grated cheese, bake additional 10 minutes. Remove from pan and cool on wire rack for 5 minutes. |
