MOCK FILET MIGNON 
2 lbs. ground beef, extra lean or chuck
1 c. shredded cheese, Cheddar
3 tbsp. grated onion
1 tsp. salt
1 beaten egg
3 tbsp. ketchup
2 tbsp. Worcestershire sauce
10 slices bacon

Mix all ingredients except bacon. On a long strip of waxed paper or plastic wrap, lay strips of bacon side by side. Form a roll of the ground beef mixture down the center of the bacon strips. Bring slice of bacon around the roll, fasten with toothpick and cut, forming a patty.

Repeat until all filet mignons are formed. Broil in oven or over charcoal to desired doneness (approx. 5 minutes per side). May be frozen ahead and cooked when needed. Very good grilled and place on rye buns removing toothpicks.
