COLORADO PEACH CREAM PIE 
4 c. fresh sliced peaches
1 1/3 c. sugar
2 c. flour
1 egg
3/4 tsp. salt
1/2 tsp. vanilla
1 c. sour cream
3/4 c. butter
1 tsp. cinnamon

To make crust, cut 1/2 cup butter into 1 1/2 cups flour and 1/2 tsp. salt. Press dough into 9 inch pie pan. For filling, slice peaches into a bowl and sprinkle with 1/4 cup of the sugar. Let stand while preparing the rest of the filling. Combine 3/4 cup sugar, 2 Tbsp. flour, egg, 1/4 tsp. salt and vanilla. Fold in sour cream. Stir into peaches and pour into crust.

Bake at 400°F for 15 minutes. After 15 minutes, reset oven to 350°F and bake another 20 minutes. For topping, combine 1/3 cup sugar, 1/3 cup flour, 1/4 cup butter and cinnamon until crumbly. After pie has baked for 20 minutes at 350°F, sprinkle the crumbs over the top of the pie. Then bake another 10 minutes at 400°F until lightly brown.
