CINDY'S APPLE BREAD 
1 c. oil
2 c. sugar
3 eggs
2 c. chopped apples
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. chopped nuts; optional

Beat oil, sugar, vanilla, and eggs. Stir in apples. Combine dry ingredients and stir into oil, sugar, vanilla, eggs, and apples. Pour into 3 ungreased loaf pans, 7 3/8 x 3 5/8 x 2 1/4 inches. Bake at 350 degrees for about 1 hour. Cool 15 minutes and remove from pans.
