BEEF STEW 
1 1/2 lbs. cubed boneless chuck
1 sliced onion
2 sliced carrots
1 sliced rib celery
1 potato, peeled and cubed
1/2 c. tomato juice or V-8 juice
Seasonings

Put chuck in bottom of casserole. On top of that add onion, carrots, celery and potato. Sprinkle with salt and pepper. Add tomato juice. Cover and put into 300 degree oven for 2 hours.

At this time, check the seasoning. You may want to add more juice. Put back into 200 degree oven for about 2 hours.
