SALMON CAKES 
1 (15 oz.) can salmon
2-3 tbsp. parsley, finely chopped
Juice of 2 lemons
1/2 onion, finely chopped
2 eggs
4 tbsp. wheat germ or whole wheat bread crumbs
Pepper to taste
1/4 to 1/2 c. whole wheat flour
Olive or vegetable oil

Drain fish and flake with fork. Add parsley and juice of one lemon and all remaining ingredients except for flour and oil. Form into patties 2 inches in diameter. Roll them in the flour and fry in hot olive oil or vegetable oil about 5 minutes or until golden brown on both sides. Sprinkle with remaining lemon juice or serve plain with your favorite sauce. They're great on buns as fishburgers. Serves 4.
