SPICY CARROT BARS 
4 eggs, slightly beaten
1 c. vegetable oil
2 c. sugar
2 c. sifted all-purpose flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
3 (4 1/2 oz.) jars strained baby food carrots
Chopped pecans (optional)

Beat eggs slightly, add oil and sugar and blend. Sift together dry ingredients and add to egg mixture. Mix in carrots and nuts, if desired. Bake in 9x12 inch pan at 350 degrees for 30-35 minutes.

FROSTING:

1 (3 oz.) pkg. cream cheese, softened
5 tbsp. butter, at room temperature
2 c. sifted confectioners' sugar
1/2 tsp. vanilla

Blend well and spread on cake.
