CHOCOLATE-COVERED CHERRY COOKIES
1 1/2 c. all purpose flour
1/2 c. unsweetened cocoa powder
1/4 tsp. salt
1/4 tsp. baking powder
1/4 tsp. baking soda
1/2 stick butter, softened
1 c. granulated sugar
1 egg
1 1/2 tsp. vanilla
1 (10 oz.) jar maraschino cherries
1 (6 oz.) pkg. semi-sweet chocolate morsels
1/2 c. sweetened condensed milk, not evaporated
4-5 tsp. reserved cherry juice

In large bowl, stir together flour, cocoa, salt, baking powder, and baking soda. In mixer bowl, beat together butter and sugar on low speed of mixer until fluffy. Add egg and vanilla and dry ingredients to creamed mix and add until blended.

Shape dough into 1 inch balls. Place balls on ungreased cookie sheet. Press down center of each ball with thumb. Drain cherries and reserve juice. Place cherry in indentation in center of each cookie.

Prepare frosting. In small pan, combine chocolate morsels, 4-5 teaspoons cherry juice, and condensed milk. Heat until chocolate melts. Pour 1 teaspoon frosting over cherry to cover. Thin with cherry juice. Preheat oven to 350 degrees; bake 10 minutes until done.
